Ceylon Cinnamon sticks or quills are best used for cooking and making tea.
Ceylon Cinnamon has a very small quantity of coumarin -0.004% (toxic to liver and kidneys), so it is much safer. Compared to the coumarin in Cassia (usual grocery cinnamon) = up to 1% Ceylon Cinnamon is more expensive than Cassia (grocery store) cinnamon because it takes much time and effort to produce. Ceylon Cinnamon trees in Sri Lanka are free from fertilizers and other chemicals (as mandated by their government).
